Mott 32 is an upscale Chinese restaurant situated in Central, Hong Kong. It focuses on modern Cantonese cuisine, Peking duck, and exquisite dim sum. The interior design is contemporary, with lighting and spatial layout that create a stylish and comfortable dining atmosphere, and seating spaced generously for conversation. Signature dishes include applewood-roasted Peking duck and Spanish Iberico pork char siu, which demonstrate innovative flavors; the former pairs fruity wood smoke with crisp duck skin, while the latter reinterprets classic char siu with Iberico pork, its texture echoing the honeyed glaze. The dim sum offerings are also refined and delicious, with attention to both form and taste. In its cooking, the restaurant builds on traditional techniques while adding modern presentation, with plating and the pacing of courses showing careful thought so that diners can appreciate each layer in turn. The service is attentive and polished, with staff introducing dishes as the meal progresses, well suited to shared, multi-course dining. The setting is sophisticated yet welcoming, suitable for business dinners or special occasion celebrations. Compared with similar Chinese restaurants, it emphasizes the transition between tradition and the contemporary rather than simple replication. Overall, Mott 32 offers a memorable taste of contemporary Chinese cuisine in a chic environment.
